It’s officially Halloween month and I am so excited! I guess it all started when I was a little girl and I would spend hours making construction paper ghosts, bats, pumpkins and banners that said “Happy Halloween”. My mom would let me decorate the house each year with my handmade decor and my love for Halloween began.
This year I have put together a Ghostly Gathering! A large charcuterie board allows for plenty of food for all of my guests but the highlight of my menu is a white queso ghost pepper dip!
Dare to dip with my recipe. If you have ever had anything with ghost pepper seasoning, you know it is one of the hottest peppers around but it has ghost in the name, so I had to use it for my ghostly gathering!
The recipe is so easy and only takes a minute to make. (See below for the full recipe.) And nothing is more of a crowd pleaser than a cheese and RO*TEL® dip! RO*TEL® provides an easy way to add a little kick to any recipe and the ghost pepper will dare you to dip.
To create our gathering, I stopped into my local Walmart to pick up the bulk of my menu items. I got a variety of meats, cheeses, bread, queso, RO*TEL®, sweets and even the little ghost toppers I used on my mini pumpkin cupcakes. I also picked up a few pumpkins that I painted to match my color scheme.
The party setup is quick and easy to do. Drape a folding table with black chiffon fabric. Chiffon is very thin and you can see through it, so I used a black tablecloth underneath the chiffon as well. Then I used two large slate boards to create one big area for my charcuterie board. I then layered all of the food onto the slate boards and made sure my ghost pepper queso dip was the star of the show. The menu board I made added color to the table and let my guests know the treats they were in for! And lastly, a cauldron of dry ice created a ghostly appearance and is always fun to have for any Halloween party!

GHOST PEPPER QUESO DIP
When I think of Halloween, I always thinks of ghosts! So what is more perfect than a Ghost Pepper Queso dip? But beware, ghost peppers are among the hottest peppers so be sure to add just a little and taste to be sure you are prepared to Dare to Dip!
What you need:
20oz White Queso Dip
Two 10 oz. cans RO*TEL® Original Diced Tomatoes and Green Chilies
Fresh Lime Juice to taste
Fresh Cilantro, chopped
Fresh Ghost Peppers, diced
What to do:
Heat white queso and pour into dish. Add RO*TEL® Original Diced Tomatoes and Green Chilies. Squeeze the juice of one fresh lime, or more to taste. Add chopped fresh cilantro. I love cilantro so I use half the bunch! Add diced fresh ghost pepper. Be very careful! This is one of the hottest peppers so add a tiny bit and taste before adding more. Wear rubber gloves to protect your skin from absorbing the oils from the peppers. TIP: If you can’t find fresh ghost peppers, you can use fresh habanero peppers or ghost pepper seasoning.
Heat and enjoy!
GHOSTLY GATHERING MENU BOARD
I love having a menu board at any gathering and this one is so easy to make! The beauty of this is that you can paint any color you like to match your theme of your party!
What you need:
16″ x 20″ Acrylic Sheet
Craft Paint
Paint Brush
White Vinyl
Cutting Machine
Menu Cut File
What to do:
Step 1: Gather your supplies.
Step 2: Paint the acrylic sheet using a wide paint brush. Allow to dry.
Step 3: While the paint is drying, download the menu cut file and cut the white vinyl. Once the paint is dry, apply vinyl to front (unpainted side) of the acrylic sheet.
TaDa! You are done!
